Fried Cube Steak, Baby Red Potatoes & Garlic String Beans

Fried Cube Steak with Gravy

Ingredients:

  • 4 cube steaks
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 cup buttermilk (or whole milk)
  • 1 large egg
  • 1/2 cup vegetable oil (for frying)
  • 1 tbsp butter

For the Gravy (Optional):

  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups beef broth
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Prepare the Coating: In a shallow dish, mix flour, salt, pepper, garlic powder, paprika, and onion powder. In another bowl, whisk buttermilk and egg together.
  2. Dredge the Steaks: Dip each cube steak in the flour mixture, then into the buttermilk-egg mixture, and back into the flour. Press the flour into the meat for a good coating. Let rest for 5 minutes.
  3. Fry the Steaks: Heat oil and butter in a large skillet over medium heat. Fry steaks for about 3-4 minutes per side until golden brown. Drain on paper towels.
  4. Make the Gravy (Optional): Remove excess oil from the pan, leaving about 2 tbsp. Add butter and flour, stirring to create a roux. Slowly whisk in beef broth, stirring constantly until thickened. Season with salt and pepper. Serve over steaks.

Creamy Baby Red Mashed Potatoes

Ingredients:

  • 1.5 lbs baby red potatoes, quartered
  • 4 tbsp butter
  • 1/2 cup heavy cream (or milk)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • 2 tbsp sour cream (optional, for extra creaminess)

Instructions:

  1. Boil the Potatoes: Place potatoes in a pot and cover with cold water. Bring to a boil and cook for 15-20 minutes until fork-tender.
  2. Mash & Mix: Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, pepper, and garlic powder. Mash to your desired consistency. Stir in sour cream if using. Serve warm.

Garlic String Beans

Ingredients:

  • 1 lb fresh string beans, trimmed
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1 tsp lemon juice (optional)

Instructions:

  1. Blanch the Beans (Optional): Bring a pot of salted water to a boil. Add string beans and cook for 2 minutes. Drain and rinse under cold water to keep them vibrant green.
  2. Sauté: Heat olive oil or butter in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. Toss in the string beans and cook for 3-4 minutes until tender-crisp.
  3. Season & Serve: Add salt, black pepper, and red pepper flakes if using. Drizzle with lemon juice before serving.
