Ingredients:

  • Fish: Salmon or Tilapia, sautéed
  • Green Beans
  • Onion: Sautéed
  • Tri Bell Pepper: Sautéed
  • Grill Seasoning
  • Garlic seasoning
  • Blue Cap Goya Seasoning
  • Butter
  • Grits
  • Eggs (scrambled or your preferred style)

Instructions:

  1. Prepare the Grits:
    • Cook the grits according to the package instructions. Usually, this involves bringing water to a boil, slowly stirring in the grits, and cooking on low heat until thickened. Stir in butter and season to taste.
  2. Cook the Fish:
    • Season your choice of fish (salmon or tilapia) with grill seasoning and Blue Cap Goya seasoning.
    • Heat a skillet over medium heat and add butter.
    • Sauté the fish until fully cooked, about 4-5 minutes per side for salmon and 3-4 minutes per side for tilapia, depending on thickness. Remove from skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add more butter if necessary.
    • Sauté the onions and tri bell peppers until soft and slightly caramelized.
    • Add the leftover green beans and cook until heated through. Season with grill seasoning and Blue Cap Goya seasoning to taste.
  4. Cook the Eggs:
    • Prepare the eggs in your preferred style (scrambled, over-easy, etc.). Season with a little salt and pepper.
  5. Assemble the Dish:
    • On a plate, start with a layer of cooked grits.
    • Add a layer of the sautéed vegetables on top of the grits.
    • Place the cooked fish on top of the vegetables.
    • Finally, add the cooked eggs on top or to the side of the fish.
  6. Serve and Enjoy:
    • Serve immediately while hot and enjoy your hearty and nutritious Wake Up Breakfast!
